Rhubarb Cardamom Simple Syrup


As spring turns to summer I always find it’s a great time for making simple syrups from things in the gardens. Right now I have a huge crop of rhubarb- my favorite thing to make simple syrup with. I don’t know if it’s the color, the variety of things you can do with it, or the DELICIOUS rhubarb compote I am left with afterwards.

1 cup water

1 cup sugar

2 cups rhubarb

7 cardamom pods- shells removed and discarded

2 tsp vanilla

I use equal parts water and sugar - 1 cup each most often - and then you can use twice as much rhubarb. I always over-rhubarb, again due to my love of the rhubarb left-overs. With 1 cup sugar/water I use about 7 green cardamom pods- removing all the seeds and adding them and tossing the shells- and vanilla. If you don’t have beans use a dash of vanilla. Bring it all to a boil and then turn it down and simmer for about 20 minutes.. Strain it and store both parts in the fridge. I love the compote on yogurt or just by spoon-which really is the best way to eat it.
